Mekeni Chicken Longanisa and Egg Breakfast Skillet

It’s been 7 months since we started staying home, engaging in fitness activities and opting for healthy choices. The stay-at-home order has even made a paranoia to simply buy uncooked and frozen meals. Instead of eating out or ordering outside, we want to make sure we’re the only ones who’s handled our food.

However, it’s not all the time that we have hours to play in the kitchen. I was so happy to see a whole variety of processed meat from Mekeni. They offer Native Longanisa, Cooked Ham, Classic Tocino, Belly Bacon, Sweet Ham, Chicken Tocino and Chicken Longanisa. But what caught my eye was the Gluten-Free label under the Chicken Longanisa making it the healthier choice among its competitors. I also read that it’s made from real chicken meat!

Mekeni Chicken Longanisa

Last October 23, Mekeni hosted a Facebook Live entitled: Enjoy More Guiltless. They’ve invited Nutritionist Reginna Lat to share some insights in gluten-free food and Chef Vince Garcia to share a recipe using Mekeni’s Gluten-free Chicken Longanisa.

According to Ms. Lat, gluten is found in grains like wheat and rye. Initially, a gluten-free diet was made for people with celiac disease or for those with gluten sensitivity, but further studies show promising results that it can help in weight loss, reduction of caloric and sugar intake helping in diabetes management and may help in bloatedness. With all this, I’m even more convinced that Mekeni’s Gluten-Free Chicken Longanisa is the healthier choice!

Chef Vince Garcia also shared a quick recipe during the Live Event which is the Gluten-free Mekeni Chicken Longanisa Casserole. It was so appealing inspiring me to have some fun in the kitchen and make my own recipe for this Chicken Longanisa.

Instead of simply frying my Chicken Longanisa, I was inspired to make it into something fresh and fun for breakfast. If Chef Vince recreated his longanisa by making it into a casserole, I made mine into a breakfast skillet.

For me, having to cook in a skillet is the best. It just gives the delicious aroma of my savoury ingredients when I started placing them in the skillet. After about 8 minutes of mixing the ingredients and continuous stirring, I can already smell the flavoursome mixture of potatoes, onions, red bell peppers, thyme and chili flakes. It looks pleasing and smells yummy especially with the hint of spice.

When I added the Chicken Longanisa, I instantly smelled the delicious chicken goodness! I could say it’s really made with chicken meat. When I carved out two holes and cracked the eggs, it’s picture-perfect! The smell was just something I couldn’t resist so when the eggs has set, I made sure to get my hands on them and have it served!

I am used to loaded breakfast skillets, but this one is incomparable. The flavor of Mekeni’s Chicken Longanisa is definitely out there and yet, I can enjoy it guiltless because it’s gluten-free. Some say healthy meals usually taste bland; but for me, you don’t have to worry about that with Mekeni’s Chicken Longanisa. I relish the taste it added in my breakfast skillet.  

The potatoes are crunchy and yet soft in the inside. The smack of the onions, red bell peppers, thyme and chili flakes are to die for in each bite. The taste gives you a mixture of sweetness coming from the bell peppers and onions, spice from the chili flakes and herb flavor from the thyme. I’m definitely loving every bite!

This would be one of my go-to’s this new normal. It’s an easy to cook meal yet something different. It’s also a new take to your usual longanisa breakfast.

At the same time, rainy days and typhoons are back. This Mekeni Chicken Longanisa and Egg Breakfast Skillet is what I needed to keep me warm and cozy. I feel homey with my favourite medium done eggs, and the guiltless meat packed with protein. Even it is still early in the morning, I already feel complete.

Mekeni Chicken Longanisa and Egg Breakfast Skillet

Mekeni Chicken Longanisa

INGREDIENTS

  • 10-15 pcs Marbled Potatoes
  • 1 Large White Onion
  • 1 Large Bell Pepper
  • 5 pcs Mekeni Chicken Longanisa
  • 2 Large Eggs
  • 1/8 tsp Ground Thyme
  • 1/4 tsp Red Pepper Flakes (Chili Flakes)
  • Salt to Taste
  • Black Pepper
  • Olive Oil

Mekeni Chicken Longanisa

INSTRUCTIONS

  • Pre-heat a skillet or cast-iron skillet to medium.
  • While the skillet is pre-heating, cut the marbled potatoes into quarters (depends on the size) and microwave in a covered bowl for 2 minutes to speed the cooking process.
  • Add a tablespoon of olive oil in the skillet and add the cooked potatoes, minced onions and red bell pepper (cut into cubes). Stir frequently for 4-5 minutes, until vegetables are soft.
  • Add the thyme and chili flakes to taste and stir to combine.
  • Add the Chicken Longanisa until cooked (about 2-3 minutes).
  • Carve out 2 holes, grease with extra olive oil and crack the eggs directly onto the hot skillet. The eggs will take about 5-7 minutes to fully set. If you prefer, you can place the pan in a 350-degree Fahrenheit oven for 5 additional minutes to help set the tops of the eggs.
  • Once the eggs have set, divide the mixture onto 2 places and enjoy immediately.
  • May add salt and pepper, to taste.
