Vask. Traditional & Modern Basque Cuisine. | Foie Gras on Mango Toast. Croquetas de Pollo y Jamon (chicken & ham croquettes). Tuna & Potato soup. Carilleras con Pina y Merengue de Leche (beef cheeks, red wine, pineapple, milk meringue, olive oil mashed potato). Scallops & Black Ink Risotto (squid ink, carnaroli rice, parmesan chips, green asparagus) . Torrija ( Brioche, milk & anise ice cream). | Wow! Everything was great! I like the foie gras with mango. It really melts in your mouth very nice combination. The croquettes were crunchy on the outside & super soft in the inside. The soup was light, simple & delish. The beef cheeks…oh my! You can really taste the wine plus the tanginess of the pineapple with the sweetness of the meringue…wow! Thats the secret ingredients thats why this dish is so yummy. Scallops were perfectly cooked. They are not tough. The risotto for me was quite salty but still it has its creamy texture, light & not sticky. They use carnaroli rice which is expensive & very hard to find. And the parmesan chips gives a little crunch to this dish. Lastly, the dessert! Wow! Made in heaven! Perfect match! The sweetness of the brioche plus the creaminess of the ice cream with a hint of anise…wow! So good!
